Jackfruit Fajitas

1/2 a large sweet onion (roughly chopped)

1-2 cloves of garlic (finely chopped)

2 tbsp avocado oil

1 package of jackfruit

2 bell peppers (cut into slices)

1 can of tomato, onion, celery mix (can sub for a can of diced tomatoes)

Fajita seasoning mix (1 tsp pepper, 1 tsp salt, 1/2 tsp paprika, 1 tsp cumin, 1 tsp chilli powder, 1 tsp garlic powder, 1/2 tsp onion powder, 1/2 tsp cayenne - less if you don’t want a lot of spice🔥)

For serving - whole wheat tortillas, chopped lettuce, vegan sour cream, sliced avocado
In a large pan heat avo oil, then add onion and garlic and cook until translucent. Then add sliced bell peppers and jackfruit and cook until softened (about 7 mins).

While these are cooking create your spice mix by combining them all in a small bowl. Once the veggies are soft, add the spices and stir for about 30 seconds until it becomes fragrant.

Then add the can of tomatoes and bring to a low boil for about 20 mins so the vegetables can absorb the flavour. Serve on a tortilla with vegan sour cream, chopped lettuce & avocado
