Thai Green Coconut Curry

2 tbsp Coconut Oil

1 Red Onion

3 Garlic

2 tbsp Chopped Ginger

2 Medium-sized Chiles

6 Big Chestnut Mushrooms

8 Oyster Mushrooms

1 Thai Green Curry Paste

1 Liter of Veggie Stock

1 Red Pepper

1 Small Broccoli

Udon Noodles

1 Block of Firm Tofu

1 tbsp of Soy Sauce

1 Bunt of Koriander

1 Can of Coconut Milk

Cumin, Tumeric, Paprika, Garlic Powder, Salt
Fry Onions, Garlic, Ginger, Chilies and Chopped Mushroom with Coconut Oil

Add the Curry Paste and Fry for a Minute with Veggies

Add vegetable stock and spices

Boil for a few minutes. Then add cut Pepper and Broccoli.

Let the Soup Simmer while Frying the Tofu with Soy Sauce while Boiling Udon Noodles

When done, add the Tofu and Noodles in the soup.

Add coconut milk, chopped Koriander and lime before serving.
